Winter is a quiet time at the winery. Barreled wines will be tasted and topped, and blends for future bottling may be created. Current stock of finished wines in the warehouse will be accessed to determine if a new fall crush would be advisable. Wines will be chemically balanced to prevent any flavor issues in the future. New barrels may be needed for future projects as well as glass and foil tops for bottling. Procurement of supplies has become a difficult function since the onset of the pandemic so it is wise to plan ahead.
