Winter 2019/2020

Wines have now been harvested, crushed, fermented and pressed. They are happily resting in barrels for maturation. Malo-lactic conversion will take place at this time as well as the complex reduction of smaller flavor molecules into larger complexes. If you have never experienced the joy of barrel tasting, I would urge you to do this as soon as possible. I am consistently amazed at the variation that the wines will display in different barrels. This is the time that the winemaker can decide to blend or release some barrels selectively for bottling. Decisions will need to be made on the length of the barrel aging process due to the readiness of the wines or possibly financial considerations as bottling can be a very costly process. The wine maker must also try and correct and flaws in the wines at this time, such as a stuck fermentation or off-flavors. If all is well I look to the Spring and the new harvest potential.
