Summer/Fall 2018

Summer is both one of the quietest months but also one of the most important. As a small winery we must determine if finances and inventory justify a new crush. A new crush decision has not yet been made for 2018. As the grapes ripen we must track the sugar content as well as the phenolic ripeness to determine a potential crush date for the harvest. Once the grapes have been harvested a multitude of issues must be faced; screening the grape harvest upon receipt, yeast species chosen for fermentation, barrels and equipment purchased and set aside. The smells and the sights of a harvest and crush are both exciting and intoxicating, and represents my favorite time of the year.
